- 4 tbsp butter
- 1/2 yellow onion
- 2 ears sweet corn
- 2 large zucchini
- 8 oz sliced mushrooms
- 1 tbsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 12 oz shredded cheese
- 4 eggs
Steps
- Heat the oven to 375 F and grease a 9-inch pie dish with cooking oil.
- Melt the butter in a large skillet, then cook the onion, corn, zucchini, and mushrooms over medium heat for 12 minutes.
- Stir in the basil, oregano, and salt, then cook for 3 more minutes to remove excess moisture.
- Whisk the eggs with half the cheese, then mix them with the cooked vegetables.
- Pour the mixture into the pie dish, top with the remaining cheese, and bake for 35 minutes, until the center is firm.
