Ingredients
- 2 1/2 lb corned beef brisket in brine
- 1 cup baby carrots
- 1 head cabbage
- 2 bay leaves
- 1 tbsp prepared grated horseradish
- 1/4 cup fat free sour cream
- 1/4 tsp dijon mustard
- salt and pepper
Steps
- Place the brisket and bay leaves in a large pot, cover with water, and bring to a boil for 10 minutes.
- Reduce the heat, cover the pot, and simmer the brisket for 2 hours and 20 minutes, until tender and at least 145 F inside.
- Add the carrots and cabbage wedges, cover, and simmer for 25 minutes, until the vegetables are tender.
- Stir the horseradish, sour cream, and mustard together in a small bowl.
- Slice the brisket across the grain, season the meat and vegetables with salt and pepper, and serve with the sauce.
