- 1 tbsp baking powder
- 2 tbsp granulated sugar
- 1/2 tsp salt
- 2 large eggs
- 3/4 cup buttermilk
- 5 tbsp water
- 1/3 cup melted unsalted butter

Steps
- Heat a griddle or large skillet over medium heat, about 350 F, for 3 minutes.
- Whisk the cornmeal, flour, baking powder, sugar, and salt together for 4 minutes.
- Whisk the eggs, buttermilk, water, and melted butter together for 4 minutes.
- Stir the wet mixture into the dry mixture and rest the batter for 5 minutes.
- Oil the griddle and cook quarter-cup portions for about 2 minutes per side, until browned and set.
