- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup vegetable shortening
- 1 1/2 cups granulated sugar
- 2 large eggs
- 2 limes
- 2 cups fresh cranberries
Steps
- Preheat the oven to 350 F.
- Whisk the flour, baking powder, baking soda, and salt in a medium bowl.
- Beat the shortening and sugar in a large bowl until smooth.
- Beat in the eggs, lime zest, and lime juice.
- Stir in the dry mixture and cranberries until a dough forms.
- Drop spoonfuls onto greased baking sheets and bake for 10 to 12 minutes, then cool for 10 minutes.
