Ingredients
- 2 potatoes
- 1 cup water
- 2 tbsp chopped onion
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 3 cups whole milk
- 1/2 tsp salt
- 1/8 tsp celery salt
- 1 dash pepper
- paprika and minced fresh parsley
Steps
- Peel and dice the potatoes, then boil them with the water in a medium saucepan for 10 minutes.
- Melt the butter in a large pot over medium heat and cook the onion for 3 minutes.
- Stir in the flour, then slowly whisk in the milk, salt, celery salt, and pepper.
- Add the cooked potatoes and simmer the soup over medium-low heat for 8 minutes, stirring often.
- Sprinkle the soup with paprika and minced parsley before serving.
