Ingredients
- 3 tbsp olive oil
- 1/4 cup lime juice
- 1/4 cup fresh cilantro
- 1 tsp red chili flakes
- 4 cloves garlic
- 2 tsp brown sugar
- 3/4 tsp ground cumin
- 6 bone-in skin-on chicken thighs
- 1 pinch salt (optional)
- 1 pinch pepper (optional)
- 1 pinch fresh cilantro leaves
- 2 slices lime
Steps
- Blend the olive oil, lime juice, cilantro, chili flakes, garlic, brown sugar, cumin, salt, and pepper.
- Coat the chicken thighs with the mixture and rest them for 10 minutes.
- Heat the oven to 425 F and arrange the thighs skin-side up on a rimmed baking sheet.
- Roast the chicken for 30 minutes, until the skin is crisp and the thickest part reaches 165 F.
- Rest the chicken for 5 minutes, then garnish it with cilantro leaves and lime slices.
