- 1 lb eggplant

- 1/2 lb ground chuck
- 1/2 cup onion
- 1/2 cup bell pepper
- 1 cup parmesan cheese

- 1 jar traditional spaghetti sauce
- 2 tbsp brown sugar
Steps
- Heat the oven to 400 F, slice the eggplant, season it with salt and pepper, and roast on a baking sheet for 20 minutes.
- Cook the ground chuck, onion, and bell pepper in a skillet over medium heat for 10 minutes until the beef reaches 160 F.
- Stir the spaghetti sauce and brown sugar into the beef mixture, then simmer for 10 minutes.
- Reduce the oven to 375 F and layer eggplant, meat sauce, and Parmesan in a 9-by-13-inch baking dish.
- Bake uncovered for 30 minutes until bubbling, then rest for 10 minutes before cutting.
