Ingredients
- 1/3 cup extra-virgin olive oil
- 2 tsp dijon mustard
- 1 tbsp fresh lemon juice
- 1 tbsp honey
- 1/2 tsp sea salt
- 1/2 a pear
- 2 tbsp finely minced shallot
- 1 1/2 pears
- 6 heads belgian endives
- 4 oz roquefort or blue cheese
- 3 tbsp chopped fresh chives or tarragon
- 1 cup candied walnuts
Steps
- Whisk the oil, mustard, lemon juice, honey, and salt in a bowl.
- Finely mince half a pear and stir it with the shallot into the dressing.
- Let the dressing stand for 10 minutes.
- Slice the remaining pears and endives, then place them in a large bowl.
- Toss the salad with the dressing, cheese, herbs, and walnuts.
