- 250 g pouch cooked grains or lentils
- 1 baby spinach
- 1/4 cucumber chopped
- 1 handful cherry tomatoes halved
- 2 carrots grated
- 1 pomegranate seeds only
- 10 olives (optional)
- 12 falafel
- 4 tbsp hummus
- 1 drizzle olive oil (optional)
- 1/2 lemon quartered
Steps
- Divide the cooked grains among three lunch containers.
- Add spinach, cucumber, tomatoes, grated carrots, and pomegranate seeds.
- Place four falafel in each container.
- Add hummus, olives if using, olive oil if using, and lemon wedges.
