Ingredients
- 1 1/2 tbsp extra virgin olive oil
- 1 1/2 lb flank steak
- salt and pepper
- 1/4 cup prepared pesto
- 1/4 lb thinly sliced prosciutto
- 1/3 cup grated parmesan
- 1 cup loosely packed baby spinach
Steps
- Heat the oven to 425 F and lightly oil a large baking sheet.
- Butterfly the flank steak, pound it evenly, and season both sides with salt and pepper.
- Spread pesto over the steak, then layer on prosciutto, parmesan, and spinach.
- Roll the steak tightly from one long side and secure it, then cut it into eight pinwheels.
- Arrange the pinwheels cut side up, brush with oil, and bake for 15 to 18 minutes until the centers reach 145 F.
- Rest the pinwheels for 5 minutes before serving.
