- 1 scant cup non-dairy milk
- 1 tsp apple cider vinegar
- 1/2 cup neutral oil
- 1 tsp pure vanilla extract
- 1 scant cup organic cane sugar
- 1 1/2 cups unbleached all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup rainbow sprinkles (optional)
- 1/2 cup vegan butter
- 1/4 tsp vanilla extract
- 2 3/4 cups powdered sugar
- 1 splash non-dairy milk (optional)
Steps
- Heat the oven to 350 F and line a 12-cup muffin pan.
- Whisk the non-dairy milk, vinegar, oil, vanilla, and sugar in a large bowl.
- Stir in the flour, baking powder, baking soda, and salt, then fold in the sprinkles.
- Divide the batter among the liners and bake for 18 to 22 minutes, until the centers spring back.
- Beat the vegan butter, vanilla, powdered sugar, and a splash of milk until smooth while the cupcakes cool completely.
- Spread the frosting over the cooled cupcakes and add extra sprinkles.
