Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp ground ginger
- 1 pinch salt
- 1 stick butter
- 1/3 cup sugar
- 1/3 cup brown sugar
- 1/2 tsp vanilla extract
- 1 large egg
- 1/2 cup sea salt dark chocolate
- 1/4 cup candied ginger
- 4 1/2 small medium pieces fresh ginger
- 1 cup water
- 1 cup sugar
Steps
- Simmer the fresh ginger, water, and 1 cup sugar in a small saucepan for 20 minutes, then drain and cool.
- Heat the oven to 350 F and line two baking sheets.
- Whisk the flour, baking soda, ground ginger, and salt in a bowl.
- Beat the butter, brown sugar, and 1/3 cup sugar until smooth, then beat in the vanilla and egg.
- Mix in the dry ingredients, chocolate, and candied ginger until a dough forms.
- Drop 24 portions onto the baking sheets and bake in batches for 10 to 12 minutes each, until set.
