- 2 tbsp extra-virgin olive oil
- 2 tbsp sherry vinegar
- 1 small shallot
- 1 tsp dijon mustard
- 1 tsp honey
- 1/2 tsp grated lemon zest
- 1/2 tsp sea salt
- 1/4 tsp freshly cracked black pepper
- 1 lb red beets
- 1 large carrot
- 1/4 cup chopped fresh flat leaf parsley
- 1/4 cup chopped fresh mint
Steps
- Whisk the olive oil, sherry vinegar, minced shallot, Dijon mustard, honey, lemon zest, salt, and pepper in a large bowl.
- Peel and grate the beets and carrot.
- Add the grated vegetables, parsley, and mint to the dressing.
- Toss the salad until the vegetables are evenly coated.
- Rest the salad for 5 minutes before serving.
