Ingredients
- 3 heads radicchio
- 8 tbsp extra-virgin olive oil
- 1 tsp sea salt
- 2 tbsp sherry vinegar
- 1 small shallot
- 1 tsp minced fresh thyme (optional)
- 1/2 tsp dijon mustard
- 1 1/2 tsp honey (optional)
- 3/4 cup crème fraîche
- 1/3 cup roughly chopped hazelnuts
Steps
- Cut each radicchio head into quarters and brush the cut sides with 2 tablespoons oil.
- Heat a grill or grill pan to medium-high heat and grill the radicchio for 3 minutes per side, until lightly charred.
- Whisk the remaining oil with vinegar, shallot, thyme, mustard, honey, crème fraîche, salt, and pepper.
- Arrange the warm radicchio on a platter and spoon the vinaigrette over it.
- Scatter the hazelnuts over the salad and serve warm or at room temperature.
