Ingredients
- 3 1/2 cups chicken stock
- 8 oz pancetta
- 1/2 small onion
- 3 cloves garlic
- 1/2 cup white wine
- 1/2 cup shredded parmesan cheese (optional)
- 2 tbsp salted butter
- 4 large egg yolks
- salt (optional)
- chopped fresh parsley (optional)
Steps
- Set a 6-quart Instant Pot to Sauté and cook the pancetta for 6 minutes until browned.
- Add the onion and garlic and sauté for 2 minutes.
- Stir in the rice and cook for 1 minute, then add the wine and cook for 2 minutes.
- Pour in the chicken stock, seal the pot, and cook on High Pressure for 6 minutes.
- Let the pressure release naturally for 5 minutes, then release the remaining pressure.
- Stir in the butter, parmesan, and egg yolks, then use Sauté Low for 2 minutes until the eggs are firm.
- Stir in the parsley and season with salt if needed.
