Ingredients
- 1 + 1/2 tbsp oil or butter
- 1 cup old-fashioned grits
- 3 cups water
- 3/4 cup heavy cream
- 3/4 cup pumpkin puree
- 3 tbsp unsalted butter
- 2 tsp salt
- 3/4 tsp garlic powder
- 1 cup freshly grated gouda cheese
- pumpkin pie spice to garnish (optional)
Steps
- Set a 6-quart Instant Pot to sauté and heat the oil or butter.
- Stir in the grits and toast them for 2 minutes.
- Add the water, pumpkin puree, salt, and garlic powder, then stir well.
- Seal the pot and cook on high pressure for 5 minutes, followed by a 5-minute natural release.
- Release the remaining pressure, stir in the cream, butter, and gouda, and cook on sauté for 2 minutes until smooth.
- Sprinkle with pumpkin pie spice if using.
