Typical price

$1.62 per serving$6.48 for 4

Typical price: Salefork's estimate of an everyday US shelf price for each ingredient. Pick your city to price it from this week's ad.

The amounts listed are small for a full dinner, so this price per serving is likely low. Plan on a side or a bigger portion.

Ingredients

  • 2 large chicken breasts
  • 15 oz can black beans
  • 15 oz can white beans
  • 1 onion
  • 15 oz can corn with juice
  • 10 oz can rotel diced tomatoes with green chilis
  • 1/2 cup chicken broth or stock
  • 1 tsp chili powder (optional)
  • 1 tsp cumin powder
  • 2/5 oz packet ranch dip or dressing mix
  • 8 oz package cream cheese
  • 1/2 cup chopped cilantro (optional)
  • 1 avocado (optional)
  • tortilla chips or baked potatoes to serve

Steps

  1. Place the chicken, drained black beans, drained white beans, onion, corn with juice, tomatoes, broth, chili powder, cumin, and ranch mix in a 6-quart pressure cooker.
  2. Lock the lid, seal the valve, and cook on high pressure for 15 minutes.
  3. Let the pressure release naturally for 10 minutes, then carefully release the remaining pressure.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Stir in the cream cheese, cover the pot, and let it melt for 5 minutes.
  6. Check that the thickest part of the poultry reaches 165 F before serving.
  7. Stir in the cilantro and serve with avocado, tortilla chips, or baked potatoes.
