Ingredients
- 1 cup butter
- 2 large eggs
- 1/2 cup sugar
- 1 cup fine cornmeal
- 1 cup all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup shredded cheddar cheese
- 1 large jalapeno
Steps
- Heat the oven to 375 F and grease a 9-inch square baking pan with some of the butter.
- Melt the remaining butter and whisk it with the eggs, sugar, and buttermilk.
- Stir the cornmeal, flour, salt, baking powder, and baking soda into the wet mixture.
- Fold in the cheddar and jalapeno, then spread the batter in the prepared pan.
- Bake for 25 to 30 minutes, until golden and firm in the center.
