Ingredients
- 2 large eggs
- 1 1/4 cups sugar
- 1/2 cup freshly squeezed lemon juice
- 4 tbsp unsalted butter
- 1 cup whipping cream
- 5 cups assorted fresh berries
- 1 few springs fresh mint (optional)
- 5 shortbread or ginger cookies (optional)
Steps
- Whip the cream with the sugar and lemon zest in a large bowl until soft peaks form.
- Whisk in the lemon juice slowly until the cream thickens.
- Layer the lemon cream and berries in four glasses, adding cookies or mint if desired.
- Chill the parfaits for 45 minutes before serving.
