Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 1/2 cup sugar
- 1 pinch cinnamon
- 2 1/2 cups milk
- 1/2 cup white sugar
- 1/4 cup cornstarch
- 3 large egg yolks
- 1 tsp vanilla
- 1 pinch salt
- 3 large egg whites
- 1/4 cup sugar
- 1/4 tsp cream of tartar
Steps
- Heat the oven to 350 F and mix the graham crumbs, melted butter, sugar, and cinnamon.
- Press the crumb mixture into a 9-inch pie plate and bake for 8 minutes.
- Whisk the milk, white sugar, cornstarch, egg yolks, vanilla, and salt in a saucepan, then cook over medium heat for 5 to 7 minutes until thick.
- Pour the hot custard into the crust and let it stand while preparing the topping.
- Beat the egg whites and cream of tartar until foamy, then beat in the sugar until firm peaks form.
- Spread the meringue over the custard and bake for 8 to 10 minutes, until lightly browned.
