Ingredients
- 3/4 cup sushi rice
- kosher salt
- 6 oz fresh ahi tuna
- 1/2 english cucumber
- 3/4 an avocado
- 2 scallions
- 2 tbsp rice wine vinegar
- 2 tbsp toasted black sesame seeds (optional)
- 2 tbsp toasted nori (optional)
- soy sauce (optional)
- wasabi (optional)
- pickled ginger (optional)
Steps
- Cook the sushi rice with water according to package directions, about 20 minutes.
- Stir the hot rice with rice wine vinegar and a pinch of salt, then cool it for 15 minutes.
- Dice the tuna, cucumber, avocado, and scallions into small pieces.
- Divide the cooled rice among 12 small cups.
- Top each cup with tuna, cucumber, avocado, scallions, sesame seeds, and toasted nori.
- Chill the cups until serving, using the remaining 15 minutes.
