Ingredients
- 1 can (28 oz) italian tomatoes
- 2 zucchini
- 1/2 cup fresh mint leaves
- 1/2 cup pecorino romano cheese (optional)
- 1/4 cup olive oil
- 3 cloves garlic
- 1 tsp salt
- 1 tsp fresh ground black pepper
- 4 cups chicken broth
- 1 1/2 cups orzo pasta
- 6 sweet bell peppers
Steps
- Heat the oven to 375 F.
- Halve the peppers lengthwise and remove the seeds.
- Heat the olive oil in a large skillet, then cook the garlic and zucchini for 4 minutes.
- Add the tomatoes, broth, orzo, salt, and pepper, then simmer for 12 to 15 minutes until the orzo is nearly tender.
- Stir in the mint and fill the pepper halves with the orzo mixture.
- Place the peppers in a 9-by-13-inch baking dish, top with pecorino if using, and bake for 35 minutes.
- Rest the stuffed peppers for 5 minutes before serving.
