Ingredients
- 4 peaches
- 1 tbsp lemon juice
- 1 envelope unflavored gelatin
- 1 cup peach nectar
- 1 envelope unflavored gelatin
- 3/4 cups cold whole milk
- 3/4 cups heavy whipping cream
- 1/3 cup sugar
- 1 tsp grated lemon zest
- 1/2 tsp salt
- 1/4 tsp vanilla extract
- optional: sliced peaches and fresh mint leaves
Steps
- Peel and chop the peaches, then blend them with lemon juice until smooth.
- Sprinkle both gelatin envelopes over the peach nectar and let them soften for 5 minutes.
- Heat the milk, cream, sugar, lemon zest, and salt in a medium saucepan over medium heat until steaming.
- Whisk in the softened gelatin, vanilla, and peach puree until smooth and dissolved.
- Pour the mixture into eight small dishes and chill for 20 minutes until set.
