Ingredients
- 1/2 cup oat flour
- 1 cup cooked chickpeas
- 2 tbsp coconut oil
- 1/3 cup nut butter such as peanut
- 2 tbsp maple syrup
- 3 1/2 tbsp coconut sugar or other sugar
- 2 tsp vanilla extract
- 1/5 tsp salt
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp ground cinnamon (optional)
- 1/2 cup vegan chocolate chips or chunks
Steps
- Heat the oven to 350 F and grease an 8-inch round baking pan with coconut oil.
- Blend chickpeas, nut butter, maple syrup, coconut sugar, vanilla, salt, baking powder, baking soda, and cinnamon until smooth.
- Mix in the oat flour and chocolate chips.
- Spread the batter evenly in the prepared pan.
- Bake for 18 to 20 minutes, until the center is set.
- Cool the cookie pie for 10 minutes before slicing.
