Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup butter
- 1/2 cup packed brown sugar
- 1 package (8 oz) cream cheese
- 1 can (8 oz) crushed pineapple
- 1/2 cup confectioners' sugar
- 1 tsp vanilla extract
- 2 cups whole milk
- 1 package (3 2/5 oz) instant coconut cream pudding mix
- 1 carton frozen whipped topping
- 1/2 cup sweetened shredded coconut
- maraschino cherries (optional)
Steps
- Melt the butter, then mix it with the graham crumbs and brown sugar.
- Press the crust mixture into a 9-by-13-inch dish and chill it for 20 minutes.
- Beat the cream cheese, confectioners' sugar, and vanilla until smooth, then spread the mixture over the crust.
- Whisk the milk and coconut pudding mix for 2 minutes, then spread it over the cream cheese layer.
- Spread the whipped topping over the pudding and sprinkle the coconut on top.
- Chill the dessert for 160 minutes before cutting.
