Ingredients
- 3 cups mashed potatoes
- 1 cup cheddar cheese
- 1/3 cup cooked bacon
- 1/4 cup chives
- 1/3 cup parmesan cheese
- 1 1/4 cups panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs
- vegetable oil for frying (optional)
Steps
- Mix the mashed potatoes, cheddar, bacon, chives, and parmesan in a bowl.
- Shape the mixture into 24 balls and chill them for 5 minutes.
- Put flour, beaten eggs, and panko in three separate shallow bowls.
- Coat each ball in flour, egg, and panko.
- Heat 1 inch of oil in a deep skillet to 350 F.
- Fry the balls in batches for 3 minutes, turning them until golden and heated through.
