Ingredients
- 2 lb / 1 kg medium potatoes
- 10 oz / 300 g streaky fatty bacon
- 1 1/2 cups grated cheese

Steps
- Heat the oven to 425 F.
- Pierce the potatoes, place them on a baking sheet, and bake for 35 minutes until tender.
- Cook the bacon in a skillet over medium heat for 8 to 10 minutes, then drain and crumble it.
- Halve the potatoes, scoop out most of the centers, and season the shells with salt and pepper.
- Fill the shells with bacon and cheese, then bake for 8 minutes until the cheese melts.
- Top the potato skins with sour cream and sliced scallion.
