Ingredients
- 4 large baking potatoes
- 3 tbsp canola oil
- 1 tbsp grated parmesan cheese
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 onion powder
- 1/4 tsp paprika
- 1/8 tsp pepper
- 8 strips bacon
- 3/4 cups shredded cheddar cheese
- 1/2 cup sour cream
- 4 green onions
Steps
- Pierce the potatoes and microwave them on high for 10 minutes, turning halfway through.
- Cook the bacon in a large skillet over medium heat for 8 minutes, then drain and crumble it.
- Halve the potatoes, scoop out most of the centers, and brush the shells with oil, parmesan, salt, garlic powder, onion powder, paprika, and pepper.
- Bake the shells cut-side down at 450 F for 5 minutes, then turn them over.
- Fill the shells with cheddar and bacon, bake for 4 minutes, and top with sour cream and sliced green onions.
