Ingredients

140 g rice noodles
3 tbsp peanut butter
4 tbsp coconut milk
3 tbsp sweet chilli sauce
3 sliced thinly spring onions
1 sliced cucumber
300 g bean sprouts
200 g prawns

Steps

Soak the rice noodles in hot water for 6 to 8 minutes until tender, then drain and rinse with cool water.
Whisk the peanut butter, coconut milk, and sweet chili sauce in a large bowl.
Slice the spring onions and cucumber while the noodles drain.
Add the noodles, cucumber, spring onions, bean sprouts, and cooked prawns to the bowl.
Toss the salad until evenly coated, then chill it for 20 minutes.
