Ingredients
- 1 cup canned pumpkin purée
- 1 cup low-fat milk
- 1/4 cup + 2 tablespoons honey
- 1/4 cup sugar
- 2 large eggs
- 1 1/4 cups yellow cornmeal
- 3/4 cup all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 3/4 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 4 tbsp unsalted butter
Steps
- Heat the oven to 375 F and grease a 12-cup muffin pan.
- Melt the butter and cool it briefly, then whisk it with pumpkin, milk, honey, sugar, and eggs.
- Stir cornmeal, flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves into the pumpkin mixture.
- Divide the batter among the muffin cups.
- Bake for 18 to 22 minutes, until the tops spring back and a toothpick comes out clean.
- Cool the muffins in the pan for 5 minutes before removing them.
