Ingredients
- 1/2 cup pecans
- 1/2 cup walnuts
- 1/4 cup sliced almonds
- 1 cup pepitas
- 1 1/2 cup almond meal
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/4 cup unsweetened coconut flakes
- 3 eggs
- 1/3 cup egg whites
- 1/3 cup melted coconut oil
- 2 tbsp honey
- 1/4 cup pumpkin puree
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with coconut oil.
- Mix the almond meal, salt, baking soda, pecans, walnuts, almonds, pepitas, and coconut flakes in a bowl.
- Whisk the eggs, egg whites, melted coconut oil, honey, and pumpkin puree in a separate bowl.
- Stir the wet mixture into the dry mixture until no dry spots remain.
- Spread the batter in the prepared pan and bake for 45 to 50 minutes, until firm and cooked through.
- Cool the bread in the pan for 5 minutes before slicing.
