Ingredients
- 2 lb red potatoes
- 1 cup cooked and crumbled bacon
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup plain greek yogurt
- 1 packet ranch seasoning mix
- 3 tbsp chopped fresh chives
Steps
- Cut the potatoes into bite-size pieces and boil them in a large pot of water for 12 to 15 minutes, until tender.
- Drain the potatoes and cool them completely for 30 minutes.
- Stir the sour cream, Greek yogurt, and ranch seasoning in a large bowl.
- Fold in the potatoes, bacon, cheddar cheese, and chives.
- Cover and chill the salad for 2 hours before serving.
