Ingredients

  • 2 large baking potatoes
  • 4 tbsp milk
  • 3 strips bacon
  • 1/2 cup raw broccoli
  • 1/2 cup shredded cheddar cheese

Steps

  1. Heat the oven to 400 F and bake the potatoes on a baking sheet for 45 minutes.
  2. Cook the bacon in a skillet over medium heat for 8 minutes, then crumble it.
  3. Steam the broccoli in a small pan with water for 4 minutes, until tender.
  4. Cut the potatoes open and scoop the centers into a bowl.
  5. Mash the potato centers with the milk, broccoli, bacon, and cheddar cheese.
  6. Fill the potato skins and bake them at 400 F for 12 minutes, until hot.
