Ingredients
- 5 cups chopped fresh rhubarb
- 3/4 cup white sugar
- 1 tsp lemon zest
- 1 tbsp fresh lemon juice
- 1/4 cup chopped fresh mint (optional)
- 6 tbsp cold salted butter
- 3/4 cup brown sugar
- 1/2 cup all-purpose flour
- 3/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp sea salt
- 1/2 cup rolled oats
- whipped cream (optional)
- vanilla ice cream (optional)
Steps
- Heat the oven to 375 F and grease a 9-by-13-inch baking dish with cooking oil.
- Toss the rhubarb, white sugar, lemon zest, lemon juice, and mint in the baking dish.
- Rub the cold butter into the brown sugar, flour, cinnamon, nutmeg, salt, and oats until coarse crumbs form.
- Scatter the topping evenly over the rhubarb.
- Bake for 35 to 40 minutes, until the fruit bubbles and the topping is browned.
- Cool the crisp for 10 minutes before serving.
