Ingredients
- 3 large eggs
- 1 can (15 oz) solid-pack pumpkin
- 1 can (5 oz) evaporated milk
- 1/2 lb bacon strips
- 1/2 cup sliced fresh mushrooms
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped green pepper
- 1/2 cup grated parmesan cheese
- 1 tbsp all-purpose flour
- 1 frozen deep-dish pie crust
Steps
- Heat the oven to 375 F.
- Cook the bacon in a skillet over medium heat for 6 minutes, then drain and crumble it.
- Cook the mushrooms, onion, and green pepper in the skillet for 4 minutes.
- Whisk the eggs, pumpkin, evaporated milk, flour, Parmesan, salt, and pepper in a bowl.
- Add the bacon and vegetables, pour the mixture into the pie crust, and bake for 40 minutes until the eggs are firm.
