Ingredients
- 1 5/8 lb russet potatoes
- 1 large onion
- 2 eggs
- 2 tsp kosher salt (optional)
- 1/2 tsp freshly cracked black pepper
- 3 1/2 tbsp potato starch
- 2/7 cup olive oil
Steps
- Heat the oven to 425 F and coat a large rimmed sheet pan with the olive oil.
- Grate the potatoes and onion, then squeeze out as much liquid as possible.
- Mix the potatoes and onion with the eggs, potato starch, salt, and pepper in a large bowl.
- Shape the mixture into thin patties on the sheet pan, leaving space between them.
- Bake for 25 minutes, flip the patties, and bake for 10 to 15 minutes more until browned and firm.
