- 1.25 lb Bell peppers
- 0.75 lb Onions
- 0.75 lb Zucchini and summer squash
- 15 oz Canned beans (black beans, drained)
- 8 Tortillas
- 4 oz Cheddar and shredded cheese
- 6 oz Salsa
Steps
- Heat the oven to 425 F. Slice the vegetables into strips.
- Toss with oil and spices on a sheet pan and roast 20 minutes.
- Add the beans for the last 5 minutes.
