- 8 cups mixed greens
- 1/3 cup chopped fresh dill
- 1/2 english cucumber
- 1/4 sweet onion
- 3 tbsp light olive oil
- 1 tbsp white vinegar
- 1 tbsp fresh lemon juice
- 1 tsp dijon mustard
- 1 tsp granulated sugar
- 1/4 tsp salt (optional)
- 1/4 tsp black pepper (optional)
Steps
- Whisk the olive oil, vinegar, lemon juice, mustard, sugar, salt, and pepper in a small bowl for 2 minutes.
- Chop the cucumber and sweet onion into thin slices within 3 minutes.
- Toss the greens, dill, cucumber, and onion in a large bowl for 1 minute.
- Pour over the dressing and toss for 2 minutes before serving.
