Ingredients
- 2 cups + 2 teaspoons all-purpose flour
- 2 tsp baking powder
- 3/4 tsp salt
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1/4 tsp almond extract
- 1/2 cup milk
- 2 1/4 cups diced strawberries
- 2 tbsp demerara (optional)
Steps
- Heat the oven to 375 F and line a 12-cup muffin pan.
- Whisk the flour, baking powder, and salt in a bowl.
- Beat the butter and sugar until smooth, then beat in the eggs, vanilla, almond extract, and milk.
- Stir in the flour mixture until just combined, then fold in the strawberries.
- Divide the batter among the muffin cups and sprinkle with demerara sugar if using.
- Bake for 22 to 26 minutes, until golden and a tester comes out clean, then cool for 10 minutes.
