15 shelled walnuts
2 egg yolks
1 clove garlic
1/4 lb butter
2 1/2 lb veal or chicken meat

Steps

Cut the meat into bite-size pieces and coat them lightly with flour.
Melt the butter in a large skillet over medium heat, then brown the meat for 8 minutes.
Add the crushed walnuts and garlic, and cook for 2 minutes.
Pour in 1 cup water, cover the skillet, and simmer for 20 minutes.
Whisk the egg yolks with 2 tablespoons hot pan liquid, then stir them into the skillet.
Cook for 3 minutes, until chicken reaches 165 F or veal reaches 145 F.
