Ingredients
- 2 cups white granulated sugar
- 1 lemon
- 4 eggs
- 1 cup vegetable oil
- 1 tsp vanilla
- 2 cups flour
- 1/2 tsp allspice
- 1/2 tsp nutmeg
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 3 large tart apples
- 1/2 cup raisins
Steps
- Heat the oven to 350 F and grease and flour a 10-inch Bundt pan.
- Peel and chop the apples, then mix them with lemon zest, lemon juice, and raisins.
- Whisk the eggs, sugar, oil, and vanilla in a large bowl for 2 minutes.
- Stir in the flour, allspice, nutmeg, baking powder, baking soda, salt, and cinnamon.
- Fold in the apple mixture, pour the batter into the pan, and bake for 45 to 50 minutes.
- Cool the cake in the pan for 10 minutes, then turn it onto a plate.
