- 6 eggs
- 2 1/2 tsp olive oil or butter (optional)
- 4 oz grated cheese
- 4 slices bacon
- 4 large "burrito-sized" flour tortillas
- salt and pepper to taste (optional)
- 1/2 cup all-natural mayo
- 1/2 lemon
- 2 tsp chipotle adobo sauce (optional)
- 1/8 tsp garlic powder
- 1/5 tsp ground cayenne pepper (optional)
- 1/8 tsp salt
Steps
- Cook the bacon in a large skillet over medium heat for 8 to 10 minutes, then drain it on a plate.
- Stir the mayonnaise, lemon juice, chipotle sauce, garlic powder, cayenne, and salt in a small bowl.
- Whisk the eggs with salt and pepper, then scramble them in the skillet with the olive oil for 4 to 6 minutes until firm.
- Warm the tortillas in a dry skillet over medium heat for 20 to 30 seconds per side.
- Fill each tortilla with eggs, bacon, and cheese, then spoon on the chipotle mayonnaise.
- Fold in the sides and roll each tortilla tightly.
