Ingredients
- 2 1/2 cups coconut
- 1/2 cup melted butter
- 4 cups flour
- 1 tbsp shortening
- 1 tbsp baking powder
- 1 tsp salt
- 3/4 cup sugar
- 1 cup raisins
- 1 beaten egg
- 1 1/4 cup evaporated milk
- 1 tsp almond essence
Steps
- Heat the oven to 350 F and grease a loaf pan with the shortening.
- Mix the flour, baking powder, salt, sugar, coconut, and raisins in a large bowl.
- Whisk the melted butter, beaten egg, evaporated milk, and almond essence in a separate bowl.
- Stir the wet mixture into the dry mixture until a soft dough forms.
- Press the dough into the prepared pan and bake for 30 minutes until golden and firm.
- Cool the bread in the pan for 5 minutes before slicing.
