Ingredients

7 oz tofu
4 1/2 small eggplants or 2 long eggplants
1/4 tsp salt
1 dash pepper
1/2 tsp garlic powder
2 tsp cornstarch or use arrowroot starch
1 1/2 tbsp soy sauce
1 tbsp chili garlic paste
1 tbsp lime juice
1 1/4 tbsp maple syrup
1 good pinch of salt and pepper
1/2 tsp cornstarch

Steps

Heat the oven to 425 F and line a 9-by-13-inch baking pan with oil.
Cut the eggplants and tofu into bite-size pieces, then toss them with salt, pepper, garlic powder, and 2 teaspoons cornstarch.
Spread the mixture in the pan and bake for 25 minutes, stirring once halfway through.
Whisk the soy sauce, chili garlic paste, lime juice, maple syrup, remaining salt and pepper, and 1/2 teaspoon cornstarch with 2 tablespoons water.
Pour the sauce over the baked vegetables and tofu, stir well, and bake for 8 minutes more.
