Ingredients
- 24 chicken wings
- 1 1/4 cups barbecue sauce
- 2 tbsp paprika
- 2 tbsp lemon pepper
- 1 tbsp salt
- 1 tbsp black peppercorns
- 1 1/2 tbsp ground cayenne pepper (optional)
- 1/2 x3 hickory wood chips
Steps
- Soak the hickory wood chips in water for 10 minutes, then prepare a grill for medium-high heat, about 400 F.
- Crush the peppercorns and mix them with the paprika, lemon pepper, salt, and cayenne.
- Coat the wings with the spice mixture and place the drained wood chips in a grill-smoker box or foil packet with holes.
- Grill the wings over indirect heat for 25 to 30 minutes, turning several times, until they reach 165 F.
- Brush the wings with barbecue sauce and grill over direct heat for 3 to 5 minutes, turning once.
- Brush the wings with the remaining sauce and rest them for 5 minutes.
