Ingredients
- 2 cans (20 oz) young green jackfruit in water
- 1/4 cup bbq seasoning
- 3/4 cup bbq sauce (optional)
- 1/2 ripe avocado
- 1 tbsp maple syrup
- 1 lemon or lime
- salt + pepper (optional)
- water
- 2 cups shredded cabbage + carrots
- 5 whole grain vegan buns
- 1/2 cup roasted salted cashews
Steps
- Drain and rinse the jackfruit, then pull it into small pieces with your fingers.
- Toss the cabbage and carrots with mashed avocado, maple syrup, lemon juice, salt, and pepper.
- Heat the jackfruit with the barbecue seasoning, barbecue sauce, and 2 tablespoons water in a covered skillet over medium heat for 10 minutes.
- Grill the buns cut-side down over medium heat for 2 minutes.
- Fill the buns with the hot jackfruit and avocado slaw, then top with cashews.
