Ingredients
- 1 tbsp vegetable oil
- 1 onion
- 1 sweet green pepper
- 1 sweet red peppers or 1 yellow pepper
- 1 clove garlic
- 2 cups cubed cooked roast beef
- 1 1/2 cups taco sauce
- 1 tsp cumin
- pepper
- 6 7-inch flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tbsp chopped green onions
Steps
- Heat the oven to 375 F and oil a 9-by-13-inch baking dish.
- Heat oil in a large skillet, then cook onion, green pepper, red or yellow pepper, and garlic for 5 minutes.
- Stir in roast beef, 1 cup taco sauce, cumin, and pepper, then cook for 5 minutes.
- Fill each tortilla with the beef mixture, roll it, and place it seam-side down in the dish.
- Pour the remaining taco sauce over the tortillas and sprinkle cheddar cheese on top.
- Bake for 20 minutes, then top with sour cream and green onions.
