Ingredients
- 6 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 12 oz driscoll's raspberries
- 6 tbsp orange liqueur
- 1/3 cup granulated sugar
- 16 oz mascarpone cheese
- 1 tsp vanilla extract
- 1 1/2 cups heavy whipping cream
- 1 lb driscoll's strawberries
- 1 pint driscoll’s blueberries
Steps
- Heat the oven to 350 F, grease a 9-inch round cake pan, and line the bottom with baking paper.
- Beat the eggs and 1 cup sugar until thick, then fold in the flour and baking powder.
- Spread the batter in the pan and bake for 22 to 25 minutes until firm and fully set.
- Cool the cake for 15 minutes, remove it from the pan, and slice it into two layers.
- Beat the mascarpone, vanilla, cream, and remaining sugar until thick and spreadable.
- Brush the cake layers with orange liqueur, then layer them with mascarpone cream and berries before chilling for 45 minutes.
