Ingredients
- 400 g black beans
- 1 large onion
- 1 green pepper
- 1 red pepper
- 1/3 cup celery
- 4 cloves crushed garlic
- 1 1/2 tsp ground cumin
- 1 tbsp oregano
- 1 1/2 tsp salt
- 2 tsp black pepper
- 5 cups water
Steps
- Chop the onion, green pepper, red pepper, and celery into small pieces.
- Heat cooking oil in a 5-quart pot over medium heat, then cook the onion, peppers, and celery for 6 minutes.
- Stir in the garlic, cumin, oregano, salt, and pepper, and cook for 1 minute.
- Add the black beans and water, then bring the hotpot to a boil.
- Cover and simmer over low heat for 30 minutes, stirring occasionally.
