7 oz firm or extra firm tofu
1/4 tsp salt
1/4 tsp black pepper
1 1/4 tbsp cornstarch
2 tsp oil
3 tbsp blackberry puree
1 tbsp gochujang
2 cloves garlic
1 1/2 tbsp maple syrup
2 tsp balsamic vinegar
green onions

Steps

Press the tofu under a plate for 15 minutes, then cut it into cubes and season with salt and pepper.
Toss the tofu with cornstarch and coat it with the oil on a baking sheet.
Bake at 400 F for 20 minutes, turning the pieces halfway through.
Cook the blackberry puree, gochujang, garlic, maple syrup, and balsamic vinegar in a skillet for 5 minutes.
Add the baked tofu and toss for 5 minutes, then top with green onions.
